(Dr. Jau-Fei Chen )

In 1988, Dr. Jau-Fei Chen, earned her Ph.D. in Immunology from the university and taught at Brigham Young University for five years. During this time, Dr. Chen focused on cancer and immune system research, publishing numerous research findings and authoring several works on nutritional immunology and scientific reports.

Historically, nutrition and immunology were considered as separate entities. Dr. Chen was the one who brilliantly integrated them, focusing on the connection between nutrition and immune system. She innovatively introduced the science of “Nutritional Immunology,” which advocates enhancing the body’s immune function through plant-based nutrition.
